Hunting Camp Meat Loaf
Ingredients:
2 slices fresh bread crumbs (about 3/4 cup)
1 large egg
1/2 cup onion, chopped
1 clove garlic, minced
1/2 cup tomato sauce
2 Tblsp fresh parsley, chopped
1 tsp balsamic vinegar
1-1/2 tspĀ  mustard
1/2 tsp dried basil
1/4 tsp dried thyme
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 lb. Red Barn ground venison
Directions:
Preheat oven to 350 degrees F. Lightly coat a large baking dish with non-stick cooking spray.
In a large bowl, beat the egg. Add the bread crumbs and all the remaining ingredients, except meat. Blend all the seasoning ingredients well. Add meat and blend again. Your hands are best to thoroughly mix.
Shape the meat loaf mixture into an oval loaf and place in the prepared pan. Bake for 45 minutes to 1 hour, or until the internal temperature is 150 degrees F. Let stand for 10 minutes before slicing.
